What Is The National Dish Of The Bahamas?

The national dish of the Bahamas is one of the best delicacies in all of the Caribbean ā€“ conch (pronounced “konk”). 

Yes, that’s right, the same gorgeous spiral shell you find in seaside gift shops around the globe is a common character in Bahamas breakfast dishes. The real treasure lies inside the shell: the conch meat.

The islands of the Bahamas are surrounded by clear, warm waters that are home to an abundant population of conch.

Because conch is so readily available, it’s the natural choice as a national dish, reflecting the island country’s close relationship with the sea and its rich marine resources.

Conch can also be prepared in so many different ways! For generations, Bahamians have been creating incredible dishes with this marvelous mollusk, including some delicious breakfast dishes.

1. Boiled Fish

One of the best ways to start the day on the islands is with fresh catch. Boiled fish is a classic Bahamian breakfast food in which the fish is boiled with onion, thyme, and scotch bonnet peppers.

If youā€™re staying at the popular Atlantis Hotel on Paradise Island, you’ll find that 99% of the resort’s breakfast choices cater to American tourists – with pancakes, eggs, and bacon earning prime spots on the menu (as well as more veggie options upon request, as it’s a vegan-friendly resort in the Caribbean).

But scroll down to the bottom of the Fish by Jose Andres breakfast menu, and there youā€™ll spot it: the Bahamian Breakfast, with the classic island-boiled fish and a side of grits and johnny cakes. Be sure to try it at least once!

2. Fire Engine

Itā€™s not clear where this dish got its name. Some say itā€™s because of the red color, as Fire Engine is always made with tomato paste sauce. 

Others think the name comes from the spicy ā€œgoat pepperā€ often used to infuse this Bahamian breakfast food with heat.

In any event, Bahamian Fire Engine is a dish made from steamed corned beef and vegetables, typically served over grits or rice. 

Itā€™s almost like a breakfast hash, where the meat blends seamlessly with spices for a delightful pop of flavor. It’s definitely one of the more interesting breakfasts in the Bahamas you’ll try!

3. Stewed Fish

Stewed fish is another traditional and popular Bahamas breakfast dish. It is a flavorful and comforting meal that showcases the region’s love for seafood and vibrant flavors.

Stewed fish typically starts with fresh local fish – such as grouper, snapper, or mahi-mahi.

The fish is cleaned and seasoned with a blend of herbs and spices, which may include garlic, thyme, onions, bell peppers, celery, and peppers for heat of course.

After marinating, the fish is gently simmered in a rich tomato sauce. This stewing process allows the fish to absorb all the flavors, creating a very aromatic dish.

The addition of potatoes and carrots adds heartiness to the Bahamian stew, and some variations may include okra or other vegetables to enhance the texture and taste.

You canā€™t leave the Bahamas without trying a Johnny Cake, a classic Bahamas breakfast staple. Lucky for you, youā€™ll find them on just about every Bahamian breakfast menu.

Made with cornmeal, sugar, milk, and baking powder, Johnny Cakes can best be compared to American cornbread. 

When you order breakfast in the Bahamas, youā€™ll often get a Johnny Cake as a side to your stewed or boiled fish or souse. 

While they certainly can be dipped, Johnny Cakes are best straight out of the oven, slathered with butter or a local guava or mango jam.

5. Stewed Conch

If youā€™ve eaten conch in the Bahamas, itā€™s likely been in the form of conch fritters; but with conch being the Bahamian national dish, youā€™ll find it in many, many other forms on the islands.

Grits make their way into many Bahamian breakfast recipes too. One of the most popular in the islands is Tuna and Grits, in which canned tuna is tossed with lime juice, mayonnaise, and sliced onion, and served next to a hot pile of grits. 

It may sound a little odd, but itā€™s actually quite comforting.

This Bahamian breakfast food is made with sheep tongue and pig feet. The feet are boiled for hours, then cooked together with vinegar and spices. After being left to rest in the fridge, the result resembles a pate or head cheese.

You probably won’t find souse on any resort restaurant menus. Instead, you’ll have to get off the resort and eat where the locals eat..

The One and Only Travellers Rest Restaurant

If you want to try some of these classic Bahamian dishes ā€“ souse in particular ā€“ then Travellers Rest Restaurant is a great spot to do so. They have a wide range of options on the menu, including not only souse, but also boiled fish, stewed fish, and stewed conch. Perhaps the best thing to try here, though, is the Cinnamon and Guava Pancakes. 

Nesbittā€™s Delaporte Restaurant & Lounge

Nesbittā€™s dubs itself, ā€œThe place for down home Bahamian food.ā€  It has been serving the classics in Nassau for more than 40 years. Nesbittā€™s is in the Sandyport neighborhood of Nassau ā€“ not far from Baha Mar Resort. Swing by for a breakfast of corned beef and grits, or boiled or stewed grouper.

Bahamian Cookinā€™ Restaurant

Bahamian Cookinā€™ in Nassau is the best place to try one of the top Bahamas breakfast foods, a Fire Engine! It holds the distinction of being Nassau’s oldest Bahamian restaurant and bar, making it a must-visit spot for those seeking a taste of authentic island flavors. The restaurant is family-owned, adding a warm and welcoming touch to the dining experience.

Cricket Club Restaurant and Pub

The Cricket Club Restaurant in Nassau overlooks Arawak Cay and is a very popular spot among return visitors to Nassau. The restaurant serves some British and some Bahamian food and gets rave reviews for breakfast. Itā€™s the place to try some of the Bahamian breakfast foods youā€™ve learned about here, in particular tuna and grits, stewed conch, and sheep tongue souse.

    I am a Bahamian and this is not a bad portrayal of our national dishes…..except for the fruit salad! Dragon fruit is eaten in resorts and restaurants – not Bahamian homes. We eat jujus, seagrapes, guineps, cocoplums, sugar apples, guava, gooseberries, scarlett plums, hog plums, star apples, etc……..
